Rollatini di Melanzane
Sliced eggplant rolled with a stuffing of spinach, ricotta, basil and pine nuts finished in a napolitana sauce topped with gratinated parmesan cheese.
Black mussels cooked in extra virgin olive oil, spring onion, garlic and chilli in a tomato and white wine sauce with sliced baguette.
Seafood pan fried in olive oil, garlic chilli, kaffir lime, fresh ginger all finished in a Napolitano, white wine broth and served with bread.
Pan fried chicken breast topped with mozzarella and prosciutto served on a roast pumpkin, steamed broccolini and finished with a sage burnt butter sauce.

Oven baked herb pork shoulder on a bed of roast fennel garnished with celery and apple seeded mustard finished with a spiced jus.

Green Papaya and Chilli Prawn Salad
Pan-seared chilli prawns served with rice vermicelli noodles, green papaya, rockmelon, fresh herbs and finished with a refreshing citrus dressing. NOTE: If mango is unavailable, it will be served with rockmelon.
